the perfect chocolate chip cookie.

guys, ive been on a serious baking kick lately. cookies and cakes and breads, oh my! my little oven has been working hard (as has the zipper to my pants.)

ive made chocolate chip cookies in the past, but i was never thrilled with the way they came out. and while i try and bake most things from scratch- the break and bake chocolate chip cookies you can find at the grocery store taste pretty darn good so i never really bothered finding a recipe i liked more… and then i stumbled upon this one. with 155 five star reviews, i knew i had to give it a try!

i made a few small changes the second time i made them and boy do they taste good. its hard to stop at just one… or two… they are crunchy around the edges but are still a little soft/chewy in the middle- best of both worlds! i hope you enjoy them as much as i do!

  • 2 1/2 cups all-purpose flour (or 300g- i like weighing my flour!)
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 1 stick of butter, at room temperature
  • 1/2 cup of shortening (1/2 a stick if you buy that kind)
  • 3/4 cup of firmly packed dark brown sugar
  • 3/4 cup of white granulated sugar
  • 2 tsp. vanilla
  • 2 large eggs
  • 12 oz. package of semi-sweet chocolate chips*

(*I’ve made these with regular chips, chunks, and mini chips- and the mini chips are by far my favorite to use!)

  • Mix flour, baking soda and salt in a small bowl
  • In a large bowl, beat butter and shortening until creamy
  • Add sugar and vanilla and beat with a mixer until well blended
  • Beat in eggs, one at a time, mixing well
  • Add in the flour mixture and beat slowly to incorporate, then beat to blend well
  • Stir in your chocolate chippers (and sneak a few, for quality control of course 😉 )
  • Cover bowl with plastic wrap and refrigerate for at least 30 minutes (I found the longer I let chill the better the cookies came out!)
  • Preheat oven to 375 degrees and line a cookie tray with parchment paper
  • Use a tablespoon to scoop out the dough and roll into balls (you can make bigger cookies if youd like- i just like the mini ones!) keep the balls about two inches apart from each other.
  • Bake for 8 minutes or until the edges of the cookies are turning brown- the center will still look a little pale! dont worry- they will brown up a bit more as the cool.
  • Cool on the pan for two minutes and then move to a wire rack to cool (or pour yourself a glass of milk and dig in!)

This makes about 6 dozen mini cookies.

early bird gets the smoothie.

whyyyy am i awakeee?! ive been trying to go to bed by 10pm so i can be up by 6am to get in a quick workout before work (more on that later)… but for some reason if i hit the sheets that early, i cannot sleep past 5am. annoying. especially since im still tired. GAH.

actually more deep sleep and less wake ups than usual.
little victories!

speaking of sleep, jawbone recently replaced my up24 with the new up2 and i loveee it. its much smaller than the up24 and, well, i guess thats about the only change haha but its a good one! i know everyones all about the fitbits these days, but i would 100% recommend the jawbone if youre interested in tracking your steps/sleep!

things i find myself doing between 5am and 6am? catching up on instagram. watching tv. reading blogs. thinking about what im going to eat for the rest of the day. (<- probably the most important thing.)

today on instagram: i wonder how this person got a hold of my family photograph (nor did they ask permission to use it, rude.)

Screen Shot 2015-07-29 at 5.47.38 AMnot on instagram (well i guess maybe it could be) is this picture mary grace sent me yesterday. ha! silly doughnut. (unrelated but semi-related… i got an apple fritter from 7-11 this weekend… oh man are they surprisingly delicious. i wish i never discovered them as my willpower is extremely minimal. especially when walking home from the bars.) i clearly ate it all before i took a picture, but im sure ill be getting one again soon and will share.

IMG_4708so i actually cancelled my huge cable package on monday (my bill was $194 last month… what the…) and downgraded to high speed internet and a cable package of about 40 or so channels, saving just about $100 a month. the only channel i lost that i really care about is bravo (i still get food network, HBO, E! and AMC… phew) so feel free to invite me over to watch housewives, k?

oh, and if you arent watching astronaut wives. start. now. im obsessed.
(you can also watch on hulu)

saw this youtube posted on another blog and had to snag it too! i think this song is a bit overplayed (aka annoys me a bit) BUT i love it with the movie mash up. hard to hate anything that contains clips from grease and dirty dancing, dontcha think?

now time for a quick workout video and then FOOD. todays breakfast is going to be a vega smoothie. ill post more about those in my workout summary post (spoiler alert: i havent lost much weight. but then again i havent gained it. small victory?) but these have been my favorite way to start the day lately! the usual morning mix:

Screen Shot 2015-07-29 at 6.16.49 AMa delicious (and nutritious) way to start the day!
(i swear it tastes better than the picture looks. #INeedANewCamera)
happy hump day everyone.

monday mashup.

sorry for not posting last week folks. i was in a total funk (boys suck) but now im back and have a bunch of fun random things to share with you! this is going to be a total mishmash- but lets just roll with it, k?

biggest win: $200!

two fridays ago brodie, victoria and i did a little north end bar wine crawling (i say wine crawling since brodie gave up all booze but wine for lent- silly bruce!) we started at the living room and then headed to panza for our dinner resi. in a strange turn of events, panza couldnt seat us (they were swamped) and giacomos had no line so we ended up there (if you arent familiar with giacomons, there is alwaysss a line around the block, especially on a friday.) after mowing down pasta we headed to corner cafe for some, you guessed it, scratchies!

i think the most id ever won before was $50- but this time i scratched off a $200 winner! holla! cosmos (and wine) on meeeee. three cheers for friends and free money.

IMG_8767(speaking of wine…) best new wine find: raeburn chardonnay

in case you missed it in my post from two weeks ago, chardonnay is my new jam. i asked my bff dan who owns the liquor store down the street to point me in the direction of a buttery chardonnay and he did not let me down.  this bottle retails for $20 and is deeeelish. def recommend picking one up if you stumble across it! (dan also told me anything from the russian river valley is usually a safe bet.)

birthday brunchin: breakfast burger style

IMG_8787the sinatra brunch at luckys lounge has been on my to-do list basically since i came to boston. i had mentioned it a few weeks ago to kelly and she decided to do her birthday brunch there! since we had a large party (i believe there was 10 or 11 of us), we ended up getting sat in the back room which was unfortunate because we didnt really get to hear/see the singer. boo.

i was torn between the danny ocean beni (two soft poached eggs atop butter poached lobster meat & baby arugula on grilled sourdough toast with lemon herb hollandaise & choice of potato) and the deano burger (flame grilled 6oz cheddar burger topped with canadian bacon, a sunny up egg & herbed hollandaise sauce on a jumbo thomas’ english muffin with choice of potato.) i went with the deano burger with tots and it was super messy but super tasty! a few of the other girls got the danny ocean beni and didnt love it, so i was glad i went with the burg.

treat yo self: spa day

treat yo selflast year kelly told me that she usually goes and gets a facial on her birthday and asked if i wanted to join in a spa day. obvi i said heck yes (i hadnt got a massage since college graduation) but i ended up scheming with her boyfriend who was surprising her with a couples massage and we played the ol’ bait and switch last minute and he was there waiting for her instead of me! i was so happy to be apart of the surprise (but i was kinda bummed that meant no massage for me haha)

well this year we both actually went to the exhale spa at battery wharf together for her birthday! we got there about 45 minutes early to sit in the sauna and relax/chat and then kelly went and got her facial and i went and got a fusion massage (from the website: a swedish-based therapy combining the best-known therapeutic massage practices to provide an unparalleled hour of relaxation. rhythmic massage movements are coupled with the use of powerful aromatherapy oils.) overall i really loved my massage, although i dont think there were any aromatherapy oils… must go more frequently than every 7 years! oh, and we got 25% for booking online, win!

best way to eat your feelings: ice cream sundaes

IMG_8808i wish i was one of those girls that gets sad and cant eat for days and loses 15lbs. me? i love to pay my friends ben & jerry a visit. while my scale might not approve, theres no way you can eat the new peanut butter half baked (with whipped cream and sprinkles) and NOT feel better about the world around you. that ish is goooood. i wasnt super sold on the boom chocolatta! cookie core ice cream at first, but the more i ate it and i ate it all the more i loved it. definitely better when its scooped out into a bowl and mixed up a bit than straight out of the container. although, dont kid yourself, that happened too.

send some sugary love: sugarwish

Screen Shot 2015-03-01 at 8.40.39 PMopened my email last week and found this sweet email (pun intended) from alli and victoria for a sugarwish! i wasnt familiar with the company before, but basically you can chose what size box you want to gift to someone, and then they get to fill it with an assortment of their favorite candies and bingbangboom its in their mailbox a day or two later!

IMG_9037how cute is this packaging?! i went with old people candy some of my favorites that are harder to find outside of a hospital lobby convenience store: sixlets, boston baked beans, licorice bridge mix and champagne bubble gummies! (close contenders were gummy peach rings, raspberry and blackberry gumdrops and holland mint chocolates.) i seriously think sixlets are the most underrated candy… butthatsjustme

recycle (and im not talking about your trash)

Recycle-Studio-Bostonso after eating 18,402 calories in ice cream and candy, working out was definitely in order. wednesday night alli and i hit up the recycle studio on newbury street for a spin class! i hadnt gone to a spin class in probably two or three years (eek!) so i knew i was about to get my butt handed to me.  the spin instructor (willa i believe) was awesome and came over to introduce herself and help me get set up correctly on my bike.

i was surprised when the class started how dark the room got, but i kind of liked it because i didnt feel like people were staring at me and my jiggly bod and slow legs. i think what i enjoyed the most about the class was that they incorporate 2lb weights in so you also get an arm workout. my arms need some major work, and they were def burning. it felt good.

my second favorite part about the class? was when it was over. HA. after toweling off the sweat, alli and i walked over to met bar to reward ourselves with avocado toast and wine.

IMG_8849it might not look like theres avocado on there, but there is. its just hiding under some delicious burrata. can you say heaven on earth? i thankfully had just got a bunch of avocados delivered in my peapod, so ive literally (semi) recreated this almost every night for dinner.

a slice of toasted rye, half an avocado, fresh lemon juice, olive oil, salt, garlic powder, lots of red pepper flakes and some shredded gruyere (since i dont have burrata.) seriously, so good and so filling. gimme them healthy fats.

cute animal photo dump (i dont think this requires explanation)

go ahead and make yourself comfortable fatty.

this is the “please stop taking my picture” pose
