sunday meatloaf.

just popping in to share an improved recipe that actually came out quite well! needed to make something to eat for lunch this week- i had some ground turkey that i had to use and considering I’ve made tacos like 10 times in the past month, figured i should mix it up a bit.

with it being so chilly the past few days, meatloaf sounded really good- but i didnt have any breadcrumbs. i did, however, have a ton of mini pretzels, so gave two cups of pretzels a whirl in my food processor.





before mixing up the rest of the ingredients, i preheated the oven to 375 degrees and lined a cookie sheet with tin foil. then it was time to get my hands dirty!


2 lbs ground turkey
2 eggs
2 tablespoons of parm cheese
1 tsp garlic powder
1 tsp cayanne pepper
1 tsp black pepper
ground pretzel crumbs

dumped all of the ingredients  in a bowl and mixed together (hands work best!) after all the ingredients were combined, formed into a loaf and then i covered the top in ketchup.


next, i baked for an hour. once it was done, i let it sit for fifteen minutes and then sliced it up!

DSCN0754i cut one tiny slice for taste testing purposes and then cut up the rest and packed it up to bring to work.

DSCN0762for minimal ingredients, this came out pretty good! and each (normal human) serving comes in at about 250 calories. not too shabby!
